Milk and Egg Pie

Pie is a traditional food of the Balkan countries, including Albania.

The Balkans are otherwise known as the Land of Blood and Honey, but with the great love that the people of this area have for cooking with dough, without fear we can add the Land of Pie.

The pie is borrowed from the recipes of the Ottoman Empire and similar or different variants of it can be found in every corner of this region.

The beauty of the pie is that every Balkan country gives this dish important nuances of local tradition.

Such is the case of Albania that has mastered and updated pie cooking wonderfully.

Milk pie ingredients
Servings: 4 or 5
3 teaspoons flour,

2 eggs

1 packet of butter or olive oil

¾ liters of milk

1 cup of starch tea

a little salt

GUIDELINES

First the pie noodles should be prepared.

Nowadays, you can also use ready-made noodles, but the best part is that you can make your own noodles.

Pour the sifted flour into a pan.

Drill a hole in the middle of it and pour water with a little salt.

Start mixing the dough from the middle, combining water with flour.

Knead the dough by hand for 8-10 minutes.

Once the dough has taken the right shape, divide it into cakes and cover with wet cheesecloth.

Let stand for 20-25 minutes.

Then open the cakes one by one, sprinkling them with a little starch.

When the noodles are open enough, bake on the stove plate.

The temperature should be medium so that the noodles do not burn.

Meanwhile stir in the milk, eggs and melted butter.

Place an unbaked noodle at the bottom of the pan.

Sprinkle with the milk mass and cover with another baked noodle.

Sprinkle all the noodles one by one with the mass of milk, eggs and butter until the pan is all full.

Finally, cover the pie with the uncooked noodles.

Coat with butter and put in the oven.

Let the pie bake for about 30-40 minutes.

After baking, remove from the oven, cut into pieces and serve.

The pie goes very well with a plate of yogurt or a glass of buttermilk./abetare.net
